Clément Rhum Agricole Vieux, Cask Collection Old Fashioned
2 oz Clément Rhum Agricole Vieux, Cask Collection
1 tsp simple syrup
1 dash Angostura bitters
1 dash Angostura orange bitters

Stir all ingredients over ice in a mixing glass and then strain into a double old-fashioned glass over 1 or 2 large ice cubes. Garnish with an orange peel.

Voodoo Grog
1 oz aged column still rum (Ron del Barrilito Two Star)
1 oz rhum agricole vieux (St. James Hors D 'Age)
3/4 oz fresh lime juice
3/4 oz fresh white grapefruit juice
3/4 oz pimento dram
1/4 oz honey mix (2:1 ratio honey and water)
1/2 oz passion fruit syrup
1 egg white (about 1 oz)

Combine with 1 cup of crushed ice and mix in a spindle blender for 20 seconds. Pour unstrained into a Trader Vic’s Voodoo tumbler or a snifter. Dust with freshly grated nutmeg and garnish with mint.

Serving punch from a 40 gallon volcano bowl, as you do.

3 Dots and a Dash

1/2 oz fresh lime juice
1/2 oz orange juice (fresh if possible)
1/2 oz honey mix
1 1/2 oz aged agricole rhum (Rhum JM VSOP)
1/2 oz demerara rum (Hamilton 86)
1 dash Angostura bitters
1/4 oz falernum
1/4 oz pimento dram

Combine with 3/4 cup crushed ice in a spindle blender. Mix for 5 seconds and pour unstrained into a “specialty” glass. I’ve found that small wine goblets work well, as does a squat stemless cocktail glass. Garnish with 3 Luxardo cherries on a skewer. 

Tiki Oasis 10th Anniversary Punch

1 oz Rhum JM VSOP
1 oz Zaya rum
1 oz strong English tea
1 oz fresh lime juice
1/2 oz cinnamon syrup
1/2 oz vanilla syrup
1/4 oz demerara sugar syrup (optional, depending on the sweetness of your syrups)

Combine in a shaker tin with ice. Shake and pour unstrained into a volcano mug or a double old-fashioned glass. To make it a punch, just multiple each ingredient by the total number of desired servings.

1 oz Appleton V/X
1 oz La Favorite Rhum Agricole Blanc (Clement Canne Bleue)
3/4 oz Strawberry-balsamic gastrique
1/4 oz cane syrup
Shake all ingredients briefly with 3 ice cubes and then strain into a collins glass filled with crushed ice. Garnish with half a strawberry.

Caribbean Preserve (Kevin Upthegrove)
2 oz Clement Primere Canne
3/4 oz strawberry balsamic gastrique
1/2 oz lime juice
1/4 oz simple syrup

Shake with ice cubes, strain into Collins glass filled with crushed ice. Float 1/2 oz soda water.
