Bumboat

A recipe from from Justin Oliver published in Martin and Rebecca Cate's book Smuggler's Cove. I had my eye on this recipe from the time I saw the presentation with the mermaid on the pineapple "island". And with fresh pineapple and 'Elemakule Tiki Bitters on hand I finally gave it a go. Spice from cinnamon at the forefront, along with the additional spice from the rye. The cocktail has a refreshing citrus note on the finish as eventually the overproof moat catches up with your bamboo straw. Now all I need is a decent lighting rig.

Bum Barrel

From Beachbum Berry Remixed. As described by Beachbum Berry in his text, this is his version of the classic Rum Barrel cocktail with elements from versions served at Don the Beachcomber, the Mai-Kai, and Steve Crane's Luau. It's designed for shaking with ice cubes rather than flash blending, so it's also a bit more travel-friendly.
