Pineapple Daiquiri
2 oz Stiggins’ Fancy Plantation Pineapple rum
1 oz simple syrup
1/2 oz fresh lime juice

Fill a coupe of cocktail glass with ice and set aside to chill the glass. Al all ingredients to a shaking tin and shake with ice cubes. Discard the ice from the coupe glass and strain into that chilled coupe glass.


Pineapple Express
3/4 oz pineapple juice (fresh if at all possible)
1/2 oz fresh white grapefruit juice
1/4 oz fresh lemon juice
1/2 oz falernum
1/2 oz honey mix
1 oz Plantation Dark rum
3/4 oz Stiggins’ Fancy Plantation Pineapple rum
3/4 oz Plantation O.F.T.D. rum
1 dash Bittermens ‘Elemakule Tiki Bitters

Flash blend with 12 oz crushed ice. Pour unstrained into a tiki mug or double old-fashioned glass. Garnish with pineapple leaves and a pineapple chunk on a bamboo skewer or pick.

No tiki bitters? No problem - omit them and you’ll have an even more pineapple-forward, slightly less complex cocktail.

Episode 25: Plantation 3 Stars

5 Minutes of Rum episode 25: Plantation 3 Stars white rum and the Admiral’s Grog

The Admiral's Grog

1 oz Plantation 3 Stars rum (white caribbean rum)
1 oz Plantation Original Dark rum (dark caribbean rum)
1 oz El Dorado 8 (Demerara rum)
1 oz honey mix (50-50 mix of honey and water)
3/4 oz fresh lime juice
3/4 oz fresh white grapefruit juice*
3/4 oz black tea
1/4 oz pimento dram

Combine all ingredients in a cocktail shaker and shake with ice cubes. Strain into a double old-fashioned glass filled with crushed ice. Garnish with mint and a spent lime shell. Optionally, augment with a sugar stick. Raise your glass and toast to absent friends.

* If you don't have a fresh white grapefruit to juice, use bottled or canned unsweetened white grapefruit juice and add a dash of grapefruit bitters.

Episode 19: Plantation Original Dark Rum

A plastic swizzle is still effective, if not truly the real thing.

Queen’s Park Swizzle, per Trader Vic’s Tiki Party book

1 oz light / silver rum (Don Q Cristal or Cruzan light)
1 oz dark rum (Plantation dark rum)
1 oz 151-proof rum (Cruzan 151)
1/4 oz fresh squeezed lime juice, with a half lime shell reserved (I’m using 1/2 oz)
Dash of simple syrup (I’m using 1/2 oz)
Dash of Angostura bitters

Fill a Collins glass with crushed ice. Add all ingredients except for the half lime shell. Swizzle with swizzle stick or a bar spoon and allow the ice to partially dissolve. Re-fill with more crushed ice and continue to swizzle until the glass frosts over. Add lime shell and top with more crushed ice if needed. Garnish with mint sprig. For an alternate fancee presentation, omit 151 rum and bitters until the cocktail is built and glass is frosted over. Top with 151 and bitters, add mint, and serve. Cocktail should be stirred before drinking. Or not, and finish strong with the overproof on ice.

Queen’s Park Swizzle, 5 Minutes of Rum endorsed version:

3 oz Plantation Original Dark rum
1/2 oz fresh squeezed lime juice, with a half lime shell reserved
1/2 oz simple syrup
2 dashes of Angostura bitters

Fill a Collins glass with crushed ice. Add all ingredients except for the half lime shell. Swizzle with swizzle stick or a bar spoon and allow the ice to partially dissolve. Re-fill with more crushed ice and continue to swizzle until the glass frosts over. Add lime shell and top with more crushed ice if needed. Garnish with mint sprig and 2 more dashes of Angostura bitters.

Queen’s Blood Swizzle

When blood oranges are in season, try this variant.

1 oz silver puerto rican rum
1 oz Plantation dark rum
1 oz Lemon Hart 151 rum
1/2 oz fresh squeezed blood orange juice
1/2 oz simple syrup
1 dash Angostura bitters

Fill a Collins glass with crushed ice. Add all ingredients. Swizzle with swizzle stick or a bar spoon and allow the ice to partially dissolve. Re-fill with more crushed ice and continue to swizzle until the glass frosts over. Top with more crushed ice as needed. Garnish with mint sprig and peel from blood orange.
