Painkiller - Pusser’s writes their recipe in “parts” which has been normalized to 1 ounce here
4 oz unsweetened pineapple juice
1 oz orange juice
1 oz cream of coconut (Coco Lopez)
3 oz Pusser’s rum

Shake all ingredients in a shaker tin with lots of crushed ice. Pour unstrained into a tall glass, a tiki mug, or a ceramic coconut mug. Add more crushed ice to fill and dust the top with nutmeg and add a whole cinnamon stick to garnish.

Gorillas on Deck
1 oz Clement Premiere Canne Rhum Agricole
1 oz Plantation Overproof rum
1 oz pineapple juice
1 oz cream of coconut (Coco Lopez)
1/2 oz ginger syrup
1/2 oz fresh lime juice

Shake with a few ice cubes and pour unstrained into a tall glass. Fill with crushed ice, add a straw, and garnish with mint sprigs and 5 dashes of Angostura bitters.

Nelson’s Blood, slightly modified (from Trader Vic’s Portland)

Juice of 1/4 lemon (squeeze over glass)
Juice of 1/4 blood orange (squeeze over glass)
1/4 oz lemon juice
1/4 oz blood orange puree*
1/4 oz brandy
1/4 oz falernum
2 oz dark rum (Blackwell Jamaican rum)
2 oz ginger beer

Squeeze the 1/4 lemon and the 1/4 blood orange over a double old fashioned glass. Shake all ingredients except for the ginger beer in a shaking tin with ice cubes and the squeezed lemon rind. Pour unstrained into the double old fashioned glass. Float ginger beer. Garnish with the squeezed blood orange rind and spanked mint.

* I use fresh pressed blood orange juice, but I don’t strain it, so it’s close to a puree in my book.

Nutty Like a Fruitcake

Egg Nog

Xmas Red

Rum (originally Tequila-Sherry) Eggnog
2 large eggs
3 oz (by volume) superfine or baker’s sugar
2 oz añejo tequila (aged rum, such as Plantation 5 or Diplomatico Reserva)
2 1/2 oz Amontillado sherry (sherry-finished rum, or other strong rum. I originally used a Plantation Trinidad rum, aged in sherry casks, subsequently I used Clément Single Barrel)
6 oz whole milk
4 oz heavy cream

In a blender or stand mixer on low speed, beat eggs until smooth. Slowly add sugar until incorporated and dissolved. Add sherry, tequila, milk and cream. Refrigerate overnight if possible and serve in small chilled cups. Dust with freshly grated nutmeg before serving.

Xmas Red
1 1/2 oz Grand Marnier (Clement Creole Shrubb)
1 1/2 oz Smith & Cross Jamaican rum
1 1/2 oz Cranberry juice
1/2 oz fresh lemon juice
1/2 oz simple syrup (hibiscus grenadine syrup for a richer red color)
Fresh rosemary needles

Muddle 8-10 rosemary needles with simple syrup. Add the rest of ingredients and shake well with ice. Strain into a rocks glass with large ice cubes and garnish with a rosemary sprig.
